how does this work in Wasabi wallet? do I simply have to leave the CoinJoin running until 100% privacy is reached for my wallet? and is 100% possible or will it get near 100%? If hundred percent is reached, is it better to leave the coins on the current wallet or send everything to a new one?

Unfortunately, ZkSNACKs (the developer of the Wasabi Wallet cryptocurrency wallet) will not be using the anonymity and privacy technology solution CoinJoin in the Wasabi Wallet from June 1, 2024.
This solution will make the Wasabi Wallet much less anonymous and confidential... Using the TOR protocol will help improve the situation a little.  
However, recent innovations significantly worsen the situation with anonymity and confidentiality for users of the Wasabi Wallet cryptocurrency wallet.

When it comes to privacy matters, we should know that it's either we have it or not having it at all, I know quite alright before now that Wasabi has been a good recommendation for use of privacy in the bitcoin community, but later on, there came about the discovery that makes the people doubt about their status quo with privacy offers since their involvement with other entities that does not support for that, I just wish they have always been as how they have started with before everything changed that users are now scared of securing their privacy with them.

Besides the points made above regarding Wasabi funding blockchain surveillance company and turning evil, I wouldn't trust their anonymity score calculations. They are either invalid, or their software is faulty. Or perhaps both. According to this topic page, it is evident that either Wasabi does not display the correct score or that it wastes block space.

Please correct me if I'm wrong. The Wasabi shill I addressed to didn't convince me with their diplomatic replies. You can read that discussion and see yourself.

How long does it take to make my wallet 100% private?

Depending on many factors, like the Anonymity score target, the coinjoin strategy, and the amount of bitcoin, it can take from a couple hours to multiple days.

What does the privacy progress mean?

The privacy progress tile represents the percentage of how private the wallet is. It considers the anonymity score weighted amounts instead of just amounts that reached the anonymity score threshold. The private value is the total amount that reached the anonscore threshold.

But aside from what other member said, there's no thing such as absolute or 100% privacy.

Considering the fact that the Wasabi team is cooperating with blockchain analysis companies (ie. companies deanonymizing transactions) I wouldn't categorize Wasabi wallet under any privacy improving tools to begin with. So the "privacy percentage" is 0%.
They can partner with many companies but one of their partners is Coinfirm

I used their coinjoin long time ago. As far as I can remember they have different set of anonymity. You can chose the one which is appropriate for you. Higher anonymity cost your higher service fees.

I don't think 100% anonymity is not what you are looking for, you are looking for the break of the chain. After receiving the coins you can either keep it in Wasabi wallet or you can move to a new wallet, that's not a big deal. But you will never connect the old address with this new coins that you received.
