You can find much bigger list of exchanges and services supporting Segwit on Bech32 adoption wiki page, along with Taproot that is just getting started.
I would like to see statistics for decentralized exchanges like Bisq that is also supporting Segwit addresses, and maybe for P2P exchanges like HodlHodl, AgorDesk and others.
Binance maybe accepted segwit but they are misleading people with their centralized bsc chain with fake bitcoin token, claiming it has lower fees.

And, even more, the legacy deposit address is buried after a lot of shitcoin chains and named in a way newbies may ab afraid to use it.
I think you made a small mistake. I guess you wanted to say the segwit deposit address is buried deep below the shitcoin chains... which is very true, and I hate how the tried to promote their Binance smart chain and Binance chain fake chains.

Binance does support SegWit, but unfortunately it still works with legacy addresses. And, even more, the legacy SegWit deposit address is buried after a lot of shitcoin chains and named in a way newbies may ab afraid to use it.
Without such idiotic behavior they should fall under Coinbase.

What is most important is the total onchain transaction in relation to segwit, I use https://mempool.observer for tracking this, I use it to track transactions that replace-by-fee is enabled as well. Total segwit transactions give more accurate information about the total number of people using it for cheaper transaction. The exchanges that are supporting segwit can be of help, but many of them are still charging the usual fee they were chargimg before, like Binance has been charging 0.0005 BTC for long, despite the fact that some of their transactions are sefwt transactions.

It shows how SegWit is being adopted among popular exchanges. 18 exchanges were taken as the basis, which are the largest consumers of the blockchain space, and this is currently ~ 40%:
I wish to know the exchanges among them that reduced the fee they are charging their customers after they are supporting segwit, most likely less than 20% of the exchanges will do that.

This link is not working, maybe from the source, I mean glassnode.
