I have 2x evga 750 g2 to power this 6x 1070ti build.  I was planning to run 3 cards off each PSU.  

I guess I'm looking for the best way to power these dual 8 pin cards

I just use two 8 pin vga ports on the power supply to power the two 8 pins.  Yes it takes up more vga ports on the power supply but I typically run dual power supplys and have extra vga ports and tons of 8 pin cables.

I think you can get manual guide if you both them just check how much voltage of 8pin needs before you put any cable cords..
And i think you can buy some cable with 8 pin in amazon so it would be safe to test first in one 8 pin before you put 2x pin in single gpu..
What psu you are using?

it depends on your power supply. cable is just spliting 2 pcie output. i use this cables on my gpu and riser cards. i did not have any problem yet.
yellow colored cables transmit 12V voltage. black cables for ground. if you look this black cables (+2 connection plug) its also parallel connected.

I ordered some of these cards (before the price skyrocketed) and should be getting them soon:

That 1x 6-pin to 2x 8-pin adapter looks like such a bad idea.

The 8-pin to 2x 8-pin adapter is probably a safer bet. Just avoid using more than one per line of PSU connectors. In all likelihood, the 1070ti shouldn't push the dual 8-pin connectors too hard, even if you overclock.

So a single 6 pin split to dual 8 pins will be fine?

yes you can use. 8pin (6+2) has 2 extra cable for ground. its not conduct power
