Actually, more memory means more electricity, then more power needed, and more heat generated.
Yesterday i downclocked my HD5770's memory to 450Mhz (instead of 1200Mhz), and the gpu temperature dropped like 4-5°C.
That's a good point if you are mining 24/7. It isn't if you are going to use it for gaming.

I've heard a few people saying the 5870 2GB mines much better than the 5870 1GB, but I don't see why

Theoretically it shouldn't, as even mem clocks are not important... What is important is the power of the GPU core

Yes if you wanna be specific :p I meant on a same and single card, mem power is not very important, instead, the core power is
