It is very common for scammers and thieves to pay with PayPal and then once they've got your bitcoin, they contact PayPal and get the charges reversed.
Accepting PayPal payment from anyone who does not have an impeccable reputation is an extremely risky thing to do. Escrow cannot protect you, because the thief will wait until after the escrow is released before they contact PayPal to reverse the charges.
You would be MUCH better off accepting a payment that cannot be reversed (such as CASH, Western Union, MoneyGram or a U.S. Postal money order).
