Kidding on the rockstar thing. But I'm very fluent in more than one programming language.

Which is the main focus on security when you setup your own bitcoind server?

I can list a few, and please give me some more ideas.

- Put the bitcoind server in a machine totally independent of the webserver.
- Put the bitcoind server behind a Tor/Privoxy to hide the location of the bitcoin server.
- Transfer the coins from the bitcoin server machine to a more secure location like for example you home computer.

This is correct? This will save my wallet against lost of coins and attacks?

I'm a newbie. I was thinking to star accepting Bitcoin on my local business www.chipbike.com. I've googled some information about the subject but I always read that is a bad idea to setup my own "bitcoind -server".

But if the Bitcoin thing is the P2P, why I shouldn't control all the workflow? My readings states that it is a best practice to give to third party's the task of processing payments.

Any comments? What the path you have choose for start accepting Bitcoins in a automated way?

If you have the ability to code, and to be able to handle the level of security needed to secure your server, set up your own bitcoind. Else, stick with bitpay or other systems which is able to do that for you.
