You are using a client wallet, correct? You can avoid having to generate a new address every time, by using a web wallet

After i sent some Btc, 'change' goes to a unknown address. How can i know previously this address ?

 How happens 'changes' process???

Use of change addresses is encouraged, to protect your privacy.

Yup, it makes the outsiders unable to tell which output is your payment out and which output is your change.

That transparent change addresses is too confusing. Change should go to address that you can see or on same from which u send.

I guess you can disable using change addresses, if you want to. (I saw an option in electrum, haven't used it)

There is no reason for you to keep track of addresses because your wallet does that for you. You only need an address to receive bitcoins. After that it doesn't matter where the coins go to as long as your wallet is managing everything. If you want to micromanage your wallet, then you will need to understand more about how wallets, addresses, and transactions work.

 How happens 'changes' process???

Bitcoin-Qt (aka Bitcoin Core) automatically generates 100 change addresses to start with, and refills the pool when it gets low. Change addresses are handled transparently to the user, so you won't find them unless you go looking. If you want to see which of the addresses in your wallet contain coins, enable coin control and look at the individual inputs when sending a transaction. The Bitcoin Wiki has more information on how change addresses work, if you're interested.

I only have experience of blockchain.info, but you can specifiy what address you want the change to go into. You haven't lost the money so it's gone into one address you own. It can go into the same address, a different one of yours, or you can create a new one specially for it. Hope that helps.

It depends on which wallet you are using.
For bitcoin core, the wallet will generate a new change address for you every time.
