MissExchange I have a lot of respect for people trying new crypto related things and standing up trying to make a difference pitted against very big business (in this case exchanges) so wishing you success in your business. Your cloud set up is good to start with (8GB RAM, Quad Core) and as you said you will scale if or when required.
A little advice:
1. Please consider changing your logo, it is not nice at all. Use Photoshop and create something better
2. It seems in order to make the home page fit responsive you removed the oprntrade home page graph but that large void empty area in the centre looks very bad, try adding something else there
3. Since there are so many empty orders for buy/sell those boxes at the footer should not be there or be replaced. Instead of using the opentrade template as-is why not change it with simple modifications to improve it
4. Maybe you started with too many coins and pairs. Consider removing them and concentrate on building your business slowly upwards with coins that have a community not cheap uselesss ones

2) Will do some frontend updates and will look into this aswell.
3) We are doing some delisting now, and as you said i will concentrate on more reliable coin pairs to get some trading volume.

Delisting is required for those coin which are dead because of not being traded on your platform. Try to add those coins which have a bigger community and are looking for the exchange listing. If you will add the coins of high potential first from the remaining then the community of that coin will come to adopt your exchange.

Ok found the Github template. Still think meanxtrade bootstrap version and clean layout is better than the OpenTrade layout. I will play around with the code and install it and see if it is worth my while launching an exchange.

FujiCoin (FJC), Fastcoin (FST), Sakuracoin (SKR) and New York Gold Coin (NYG) will be delisted from our Exchange.

Most are selling Exchange script for a lot of money (which for me is funny, as the most scripts people selling are built on open source) then they just readjusted the frontend.

2018-06-08 UPDATES
Made some shell scripts on all Wallet servers. If the Wallet unexpectedly stops, it automatically starts again (1 minute intervall) also if the server reboots Wallet automatically starts. This improves the uptime of all coin wallets and should never be down more then 1 minutes (May only be longer downtime if service provider have outtage that we can't affect)
Made also so MissExchange starts automatically if the server reboots (after outtages that we can't affect) this also to provide more uptime.
Summary: All coind (Wallets) starts automatically after servers reboot and if they stops. MissExchange starts automatically after server reboot (if it been an outtage on the server farm).

Made some shell scripts on all Wallet servers. If the Wallet unexpectedly stops, it automatically starts again (1 minute intervall) also if the server reboots Wallet automatically starts. This improves the uptime of all coin wallets and should never be down more then 1 minutes (May only be longer downtime if service provider have outtage that we can't affect)
Made also so MissExchange starts automatically if the server reboots (after outtages that we can't affect) this also to provide more uptime.
Summary: All coind (Wallets) starts automatically after servers reboot and if they stops. MissExchange starts automatically after server reboot (if it been an outtage on the server farm).
