It is possible.
Eg

Game: A vs B
A and B deposits 0.01BTC with me before game.
A wins.
A gets 0.02BTC

as simple as that...

The problem of bots is still there.
In the end, it is not a game of chess, but a game of finding the most powerful chess program.

This would only work in real life, as over the internet, the person with the best chess program wins.

Chess programs these days can beat the best human chess player in the world.

I need somewhere where I can trust I'm getting the money, where we both put an amount on the stakes and the money automatically gets sent to the winner, and hopefully somewhere with a chat/ live chess, not day-to-day. Thanks!

If you're including money in this, the potential for abuse is huge. It would come down to a competition between chess engines in the end.
