Bitcoin-QT is actually rock solid on my iMac. Armory however...well thats a different matter! 
No complaints here with Bitcoin-QT on mac, however, I must say that I can't wait for the new version to come out with parallel block downloading!

Bitcoin-QT is actually rock solid on my iMac. Armory however...well thats a different matter!
My bitcoin-QT is normally ok, but yesterday my Mac "hung" and then it had to reindex the whole blockchain upon rebooting ..... guess that's to be expected but not fun.

It was pretty unstable when I tried it a few months ago. Kept crashing on me and slowed down my machine even more (Bitcoin-QT already does a number on it).
Will be great when 0.91 comes out with full support for OS X. I've seen Armory running nicely on Windows so can't wait to have that stability on OS X as well.

Yeah, I wouldn't recommend running any bitcoin-qt based wallets on OSX, they slow the machine down and also have a tendency to get corrupted. (Not suggesting Armory is bitcoin-qt based, just a general comment on bitcoin-qt or altcoin wallets that download the full blockchain running on OSX)

For me the interface is pretty stable but Armory can't find my standard Bitcoin installation. (which is completely synced to the network) Is it possible that the it fails because the data directory (/Users//Library/Application Support/Bitcoin) is a symbolic link?
We hope sometimes in February, but nothing is set in stone yet.

Not too sure what you are describing here.
This is how you should be going about it anyways: Create your wallet on your offline machine, create a paper or fragmented backup, verify the backup, then create a watching only wallet of your wallet and take that your online computer.
You can outright copy WO wallet that file to your datadir or import it through the import option.
If you have a wallet which private keys have been exposed to the network for a long period of time I'd suggest just moving these funds to a proper offline wallet. You can get rid of the private keys through Armory. Pick Delete/Remove this Wallet in your wallet properties window.
I tried Armory on Mac a while back but didn't get on with it very well. Good news about getting someone full time working on Mac. When would you expect a new Mac version?
