Gambling is most likely the easiest step, and a pool to make it starter friendly.
Vircurex said there also needs to be a service that uses bbqcoin for payment. So a bbqdice or whatever would work.

I'll send a message to VirCurEx, as soon as they are up again, to ask if they would support BBQ on their exchange if hashrate (and diff) is high enough.
