You keep your wallet (and private-keys) in a offline device and use a online watch-only wallet to see your balance and build your transactions.

Don't ever use any website/s to create your cold wallet except if this site has a GitHub repository and the site can run offline like Bitaddress.org, just follow TryNinja's post. Always do it offline, and if you have another computer you can use it to too, just don't ever connect that PC to the internet, and use electrum desktop wallet for this.

Don't ever use any website/s to create your cold wallet except if this site has a GitHub repository and the site can run offline like Bitaddress.org, just follow TryNinja's post. Always do it offline, and if you have another computer you can use it to too, just don't ever connect that PC to the internet, and use electrum desktop wallet for this.

Go with Ledger Nano S this is the best way to have your own cold wallet. But if you don't have any budget and you have some spare laptop machine there, just install an hardware wallet and keep your bitcoins there and forget it like you never did it. And my choice for that wallet is electrum, write the private key or seed on a piece of paper and stick it somewhere that can't be erased nor be reached by someone.

There are a few options. These are the ones I use/recommend:

Paper wallet:
1. Go to BitAddress.org;
2. Click at the "zip" link at the bottom left part of the page to download the page source code;
3. Unzip the file;
4. Disconnect from the internet;
5. Open the "bitaddress.org.html" file and follow the steps in the screen.
6. Write down/Print your Bitcoin address and private key.
7. It's done. Now fund your address and keep your private key secure.

Electrum cold-storage:
I could write a guide or just link this video[1] that explains everything step-by-step.

Buy a hardware wallet:
a. Trezor - https://trezor.io/
b. Ledger Nano S - https://www.ledgerwallet.com/

I never use any website to make a cold wallet.. If you really wanted to create cold wallet i think electrum is the best to generate your own cold wallet but you need to backup first the private keys..  I don't trust any wallet as of now online to create own cold wallet ..
Electrum will be the best choice..  Or if you wanted to be secured try also hardware wallet which is trezor and ledger nano..

I actually downloaded the blockchain.info HTML page from their GitHub page, and ran that offline entirely to create my paper wallet.  I did the same with myetherwallet as well.
