I hate the slow network sync, but not sure if this is exclusive to the Mac.[...]

I have the Bitcoin client on my Mac and network syncs do take time. The network syncs are slow because the client has to verify every block and its transactions. This is not a Mac-only thing.However, if someone wanted to steal your coins, couldn't they bypass the encryption and go straight for the wallet.dat?
The wallet itself is encrypted. How would you bypass its encryption? 
I hate the slow network sync, but not sure if this is exclusive to the Mac. Maybe it helps it run more smoothly. Otherwise I like it.
