I’m using gtx 1060’s with 6 pin connectors. And I have like 3 of the bitmain just laying around figured I’d use them instead of buying new ones

Yes, it's a good idea to use bitmain PSU for connecting video cards as long as cards are 6pin because most of the cards use 8 pin connectors then this PSU will not be the good investment.
There are plenty of server PSU you can buy cheaper than bitmain.

Anyone ever tried one psu for motherboard and one bitmain psu for gpu’s? Is it a good idea bad idea?

Yes, it is good idea!
You can setup your rig the way that bitmain psu is powering your gpus while normal psu is powering mainboard with cpu and risers

No real difference compared to using a server psu and breakout board. Personally id always use a server psu as i dont trust bitmains build quality in psu’s

It has PCIE plugs that are standard for GPUs and Bitmain miners also use the 6 pin connection. The answer is yes. It's fine for use with anything taking PCIE  6 pin plugs.
