Not only this time I've read about that Symbol NEM, it's on the altcoins discussion posted many times.
Can solutions that blockchain provide help us get more awareness, or can these be solved by a simple server database?
Yes, any piece of technology that raises awareness and do help us for living and gives solutions are helpful. If you say about a "simple" server database, how simple is that?

Define the problem that you want to solve, compare the solutions that can be offered to you with Blockchain and other solutions, then you can evaluate the usefulness of the services provided by the blockchain.
I did not understand your problem, but it seems simple, so a simple database will suffice. Managing blockchain data is very expensive and requires the user to verify a lot of operations and include them in the block and the inability to delete that data.
It is more suitable for financial services that need more trust than databases.

A normal database needs a central authority that all of the different custodians and end consumer have to trust. Blockchain provides that much-needed trust.

2. Each scan is then securely recorded on Symbol blockchain.

3. Sustainability metrics can then be presented in real time with tracked .data

A supply chain is a network between a company and its suppliers to produce and distribute a specific product to the final buyer. This network includes different activities, people, entities, information, and resources.
