I have been thinking of either trying to get Doom to run whilst mining or even trying to get two instances of the miner OS on a single card to have them switch back and forth. Mostly a fun project with some old mining gear

What are you trying to doom? Do you mean you are trying to kill the miner while mining?

I think you can't able to boot the sd card on the miner with dual OS but I think it is fine just boot the braiins in the SD card and then move jp4 to the original position to automatically switch to stock firmware.
Or you can use bos toolbox because it's allowed to install and uninstall os through bos toolbox.

Okay thank you for the rec, seems I may need to dive into the heavy bits of the OS.

While running BraiinsOS from SD card on an S9, can the spare storage space on the SD card (in the case where the card storage space is larger than the OS firmware) be accessed, eg from a custom modification of the BraiinsOS?

No.  But if you can get a 32gb card to work (some do) and if you partition it into a 16gb and a 16gb .  you could access the empty one with proper programming.

The control board is pretty much a cheap small pc/rasp pi/beaglebone

so a proper os done exactly correct could access the second empty partition. 

I can't imagine why you would do it.  care to tell us your idea?

I don't think you can access the SD card while it's running in your miner.
What exactly do you want to achieve?

You can  just use the SD card to flash braiinsOS to control board NAND than booting braiins with an SD card.
