Check out NLNico's dicesites. It's a 3rd party website where he compiles every statistics of the most known dice sites here in the gambling section. You can easily find some good articles by googling your question. Example The example also mentioned a website called "thebitcoinstrip" which also track stats of bitcoin casinos but now they're under development.

How big is the market? The casinos? The players?
The ICO's who went live didn't had a lot of info in their white papers.
