You can use Cryptopia if you want to trade BTC/XMR. It's a reliable exchange platform so far.
You don't need to have a verified account as long you don't need to withdraw 5000$ daily. It's a high limit for most of the people. And if you need over $5000 then do it during multiple days.
There is HitBtc as well but I am not 100% sure about the KYC there, I used it one time only but didn't do anything regarding giving personal information

Shapeshift is on the top of my list right now but I am looking for alternatives to evaluate all options.

Didn't Poloniex change their system to require KYC for all transactions now?

I don't know of any recent changes at Poloniex, but maybe I am out of sync with the news there, since I didn't withdraw in the last 2-3 weeks.
I see nothing related to this on their news feed.

I know that Bittrex became (too) strict on KYC lately, so maybe the legislation have change and soon the other exchanges may have to follow?

I think that Shapeshift does this directly, but I don't know if they need KYC data since I've never used it.
What I actually used was Poloniex, which, under 2000$ per day doesn't require that much data about you. Polo is a real exchange and the fees should be lower too.
