Since Apollo BTC miner contain Single Board Computer (SBC), theoretically you should able to install LTC full node or any software which match CPU architecture. But obviously you can't mine LTC since they include SHA-256 ASIC rather than Scrypt ASIC.
You should ask this on their official thread but my guess it's no you can't able to install LTC full node because it was built only for BTC.
