I was wondering if you can put 2 or even 3 PowerColor AX7970's on one 500w power supply?

Spend the money on the new power supply.  If the power supply pops it can take out the MB or worse.  Spend $79 and get a 700W.

Depending on how far you undervolt/downclock, you can get those 7970s to pull anywhere from 75-350W. It can be done, but don't expect amazing performance.

So 3 would be out of the question.
I just picked up 4 computers with good cpu, memory, ss hard drives, for 0$
Now im trying to figure out how many cards i can fit in each without buying
new power supplies.

depends on scrypt/sha256 and what volts, core, and memory you are running at. my rosewill capstone 450W shut off when I had 2 7970 doing SHA256 at stock volts, OC core, and UC memory.
