I made some money with Zcash some time ago, but before the Asics
When Asics hits a coins, it's almost impossible to have a decent profit with GPUs or CPUs, if the team of developers do not block the Asics, the only way is to surrender and buy some Asic too, but it's a hard decision, because people in China is already mining with some Asic, and when they sell to you, it will be obsolete in a few time

I think Asic miners are better choice because they bring higher Return of Investment within a year, mining coins with Graphics card can't ROI in a year, correct me if I'm wrong because I've tried even with the latest AMD/Nvidia Cards

It is true to some extent, but still, cheap used GPUs can ROI really fast, especially if you have free or cheap electricity. Using high-end or cutting edge technology is usually not done in GPU mining space as it is much more expensive and has longer ROI period. However, to every statement there are exceptions.

I personally prefer ASICs due to (subjectively) less tinkering, less space used, less cables and higher hashrates. However, I do have a bunch of CPUs mining Randomx algorithm as it is really profitable currently.
On the other side, I have a handful of GPUs but they are used for Folding at Home (unprofitable cause / charity) in collaboration with Linus Tech Tips's team.

Profitability is a relative term, what do you mean by profit. For some its $0.01/per day and for others is $10/per day with their ASIC. Chances are since there are ASICs out for it, you cant really compete with the large mega farms of China. The equipment is not cheap and if you live at home then your electricity isn't either.

I remember when ZCASH launched back in 2016, I was one of the first miners and I think I made like a fraction of a coin like 0.001 ZEC or such however the price on Poloniex at the time due to supply shortages was like 100 ZEC/BTC so made like 0.10 BTC or so within the first hour or two.

Later during the Q1 2018 period it was also profitable especially with old GPUs like R9 280X, I remember it made like $5/day on those ancient GPUs. For GTX 1080Ti it might of been triple that.

Those days are gone however.

If you want to mine with GPU's and at the same time want to get massive profits than try looking at a small coin that has low-difficulty yet bet has better growth chances in the future. ZEC is good but the difficulty is high there, You can try another good privacy coin like Ryocurrency(RYO) which is relatively a young project with a lot of future potentials, and it is minable on both AMD and Nvidia GPU's along with that it is also suitable for low-end/low-memory GPU's. For long-term miners, this could be the most profitable coin to mine, it is already in 10 on what to mine.

I like ZEC conception of absolute privacy. And I believe one day privacy coins will be widely used. How can I start to mine ZEC? Is ASIC a kind of "must have" for mining or it's possible with GPU?

As far as I know, ZEC stopped being profitable for GPUs somewhere around middle of 2018 when Z series of Antminer came out.
You can mine ZEC with your CPU and GPU but I would not recommend it. However, Z9 Minis can easily be found for cheap in second hand market. Z9 are a bit more rare but they can as well be found for smaller amount of money (saw bunch of used between 300e and 700e with PSU in Serbia, but it will depend on country). And the best and most profitable is Antminer Z11, which is quite rare nowadays as there was only a few batches and most of people are not willing to sell them. I personally have it and it might be the miner I am going to keep for a few years as I really believe in Zcash and it is quite profitable and easy to overclock (or underclock) if needed.

Also, there are quite a few of guides on internet on "how to mine ZEC with GPU", you just need to search something in line of: "Zcash Mining Guide for Beginners".

Also, mining YEC (friendly fork of ZEC) might be better if you only have GPUs but it is still not as profitable as other coins.
