You should backup the watch only wallet because that has labels for your transactions and addresses. Also a soft copy backup of the seeded wallet doesn't hurt.

The seed is all you need, correct.
I have an offline wallet created on a netbook with a watch only wallet on my online machine. Should I make a backup of my wallet? Since I have my seed, isn't that sufficient if say, my netbook gets destroyed? Thanks!
