How 'bout one acre under roof with racks twelve high, in essence somewhere north of ten acres producing food every couple months year round? Rewatch the video linked in the OP and envision conducting seminars to those desiring to grow happy "happy plants".
Imagine what you could grow in an even larger vacant industrial plant already wired, etc., especially one that's a few stories tall. Bear in mind that organic lettuce grown locally would demand a higher price point than GMO lettuce grown afar, most of the time imported from another country. Did I mention the pre-order/prepaid aspect of said lettuce so to lock in a better price? Call it Cryptsy Lettuce, and after amassing ten million dollars, move to China with the bounty after spraying the plant with Roundup.
