The key is finding a company offering a utility token. Boon for example (in my signature) allows US residents to participate in there ICO.

Additionally, http://badcryptopodcast.com about once a week has an ICO spotlight, which often times you can find companies who have utility token ICOs. The guys on the podcast normally interview people on the project, which adds some more insight into the project.

As you probably know, US residents cannot participate in Pre-ICO's or ICO's per SEC (really sucks) but Crowdsales are fine. Anyone know of a good resource to track upcoming crowdsales?

Here in crypto ICO and crowdsale are the same things
I think you refer to utility token but not security
For example, I know 2 projects from US with utility tokens and open to US residents - DataWallet and FCFL. Quite interesting projects by the way
Please check announcement thread there you can find all upcoming ICO/crowdsales/tokensale
But you need to ask each team if US citizens can participate in such
