It's not going to be a problem at all. Maybe some upmarket casinos might not allow you to, as it'll look too cheap. You could also pretty easily record them on your phone too, for all anyone cares.
Funnily enough, I've actually been in casinos that actually give you paper and pencils to keep track of games, specifically so you can develop your own superstitions. A lot of the older crowd was keeping track of reds vs. blacks, to figure out which is "due" to come. It's great for the casino
