1nch now also has limit orderbook. But personally Im using https://idex.io/ on polygon but volume of Decentalized Exchange like this is very small so use it with caution like spread etc.

AtomicDEX from Komodo uses atomic swap technology and this dex has order book inside the komodo wallet.  AtomicDEX mainly support UTXO coins like BTC LTC DOGE etc,  but it support BNB  ETH recently.  The issue of this dex is that liquidity is small so that it works well for small traders only, may not work for large traders that requires huge liquidity.

Wow, this made me look back at Counterparty and Waves, the only DEXs I'd ever used prior to all the ERC20 ones that came out in the years after.

Looks like both virtually don't exist -- 90-day volume of $50 on Counterparty while Waves says it is no longer supported.

Wonder if any non-EVM DEXs are still around, I suppose you could still do BTC DEX on Counterparty, just need to advertise the order.

Unfortunately, high liquidity and volumes are with the swap dexes (the ones with the AMM mechanism) so you will end up with  wide spread in Old-School dexes that have order books.

You might wanna try

1. Loopring (https://loopring.io/#/trade/pro/LRC-ETH)
2. Apollo dex (https://www.apollox.finance/en/trade/APX_USDT) (only 4 spot trading pairs)
3. stellarterm.com (https://stellarterm.com/exchange/XLM-native/USDC-www.centre.io)

you can check it out in this list where it says orderbook type https://coinmarketcap.com/rankings/exchanges/dex/  dydx i think it the top option since you only want to trade ETH.

you could actually just use swap after all what you wanna trade is ERC20 compare to real BTC/USDT which means an order book that has real BTC. there are several dex that you don't have to receive wrapBTC or the likes of it.

There’s loopring.io I’ve seen in the subreddits. I can’t vouch for it but it’s on the official webite.

Note that these DEXes aren’t actually decentralized but hybrids which took bits from both worlds - decentralized and centralized.

I want to trade on ETH / ERC20 tokens primarily.

2018 then I got to know IDEX for ERC20 network (iirc I only traded once). Only need your external wallet connected. Recently I checked the site is still active but with a lot of changes in appearance.
Not a recommendation, if you decide to use it please DYOR first.

Well, I can't think of any right now but one of the usual dex that I use when it's come to buying erc20 tokens is Uniswap but yeah it doesn't have orderbook.

From your list I see only Forkdelta for ETH, but it seems to not be active anymore. No trading data on CMC or anywhere else.
Forkdelta has been almost dead long time ago. And mostly, the tokens listed there aren't that much to be taken care of as liquidity isn't that much there.

That's a lot bro, it depends what network you wanna trade, have you checked on https://coinmarketcap.com/rankings/exchanges/dex?
Some have an orderbook feature, such as

I checked this dex, but it seems it has only perpetual futures.
