Yes you can generate many addresses from the MPK using scripts. If you tell me what programming language you prefer I can recommend a suitable solution.
Electrum generates 20 addresses from the start, that should be enough for a normal user and whenever you use an address it automatically generates the next in line for you to use.
it is best not to mess around with these things if you don't know what you are doing.
