Should I generate a new one with each transaction or is it safe to keep using the same one? Coinbase keeps spitting out the same address whenever I try to move BTC over there.

You don't need to. Depends on what you're doing. Also, it doesn't matter if people know your public addresses, just keep your private keys and log in details safe.

It's you choice, you can use 1 Address for every transaction, or only 1 Address for every Service you use.

The Security is the same, but you meight not anonymous, so don't buy illegal Stuff from an Address you used on MtGox  Cool
