I have so many external hard drives I couldn't possibly list them all. Most of them are backups of our business. They normally range from 1tb-4tb. I believe I have smaller ones which haven't been filled up yet but they are more for temporary files.

Yes, several dozen terabytes, about half as backup.

I do not have internal HDDs in any of my systems, just SSDs. and my main desktop PCs/workstations boot from PCIe SSDs for better performance.

USB3.0 really made larger external HDDs practical. Not a lot of machines have multiple eSATA ports and USB2  is just too slow. It used to take days to copy a multi-terabyte HDD through USB2. With USB3 it takes hours.

1TB internal
3TB external mostly for media/large applications/backups
500GB external for transferring large files.

However I really want another large external as a secondary backup because I'm pretty paranoid about losing all my data.

Yes, many, mostly for backups. I also use bare drives as externals, with one of those handy docks you can plug than into.

Why?

I have this 4TB dual enclosure. It supports RAID0, RAID1 (disk mirror), Normal (shows two disks) and JBOD (combines the two disks).
