They are plug and play solutions, and have no drawbacks. But since they are intended for mining only, you should not expect to have an adequate experience doing anything else (ie using a browser).
If you can set up Linux to mine properly with the proprietary drivers and all, it will be exactly the same.
Of course they have drawbacks. Simplemining doesn't support Nvidia cards at all and EthOS doesn't officially support Nvidia cards, but can be done if installing drivers and miners etc. manually. But at that point you could just go with any Linux distribution and install drivers and miners manually - making EthOS obsolete.

I was wondering if you had any experience mining using NVidia GPUs with EthOS. EthOS says it is built for AMD but NVidia will work.

I'm looking at a bundle for a 4 GPU rig from gpushack.com which includes EthOS preinstalled.

Been using ethOS for about a week now and I have nothing to complain about. I get much stabler hashrates compared to Windows is the big thing.

I was planning going the straight up Linux route, but seems a lot of people are using EthOS or Simplemining. I keep reading about problems in the Simplemining thread, so wondering how much more complicated is setting everything up in Linux? I've setup Raspberry PI's so I have some terminal experience and can get around in terminal on OSX.

What are the drawbacks of using either EthOS or Simplemining?

Simpleming is easy and great for those who want a plug and play
I've never had a issue with simplemining it's always been a user error
