My question is, what can those ETH wallet be used for?
Greater eligibility potential of getting some token rewards in the ecosystem or new coins on other chains without much effort. But you shouldn't add any assets to that address.
As for a collectible, that's bullshit I think. I don't know exactly how it plays. What is clear is that the previous owner still has the private key, and can sell it several times to other people.
Is that true? As far as I know, I still haven't heard where the Ethereum genesis ICO wallet will get rewards in other ecosystems/chains without much effort. This seems like nonsense, because what I know is that those who have more interactions have more opportunities.
Obviously nonsense for collectibles, remember never be fooled it's possible that he is making money by selling his ETH genesis wallet and it is still possible to resell it to someone else.

I have also seen people buying such addresses for 10$ or so but they also ask for the address to have transactions history on uniswap i wonder what they do with these.

Does it remain a valid "collector's item" when two users have a private key that can access the address?

I am just curious why someone will buy a wallet private key when they can create a new address. What would be the purpose of buying an old wallet anyway? I don't think there would be any good intentions to buy an old wallet. On the other hand, the seller will always have private key access, which means he can always access the funds as well. I can see it's highly risky to buy an old wallet private key. Proceed with caution. 
I asked a similar question sometime back, and it looks like some people are buying such wallets for future airdrops or tax purposes. The airdrop part does not make sense though, especially since the seller can also have access to the wallet using the private keys.
