How did poloniex , coinbase and others got all the users ?.

they advertised a lot.
for example back when poloniex was small and Cryptsy was big (this is back when polo had a good support team and respected their customers), polo did a lot of advertisement, they even had a page for "giveaways" where they put some free coins there and also allowed coin developers to add their tokens there in case they wanted to give some away. and "free money" always attracts more people.

Any business/service finds it's initial customers by a lot of advertising and marketing. Bittrex and Poloniex are well established now from many years. Although they have issues in their websites but they do have regular users who visit their sites daily. I have seen new exchanges offering various schemes to it's initial customers for opening an account with them at their exchanges. Most of the exchanges uses such ideas and offers various schemes and services and free coins and trades to attract users to their sites. As the number of users registering with them increases they get more benefits from them and that's how they grow their services.

that is the reason to join this forum to know all the information about the exchange, tokens, and where token will be off by dev, almost all dev are definitely set where token will be released. social media is also very important here, it is very easy meeting sellers and buyers on exchange  Grin

The first thing to know about the crypto world is that the market is there as usérs are spread across the whole world all that is needed is to create a workable project and let t decide for itself. Like someone have  rightly said that's its advertisement through targeted ads but I also took a look from the angle of promotion by asking to use the platform without the payment of fee then ask for review or even as them to find a bug for a bounty.

This two options will give the site its first set of clients and as the day go by, it begin to increase up to the point that other services will be doing the advertisement for you for example, I didn't get to know about those sites from their advert but for projects that see being listed on that platform as an achievement so they announce with all their abilities.

Advertising and demand. Most people who initially used their services are in need of a trading platform where they can exchange their coins to fiat. Also, after the Mt. Gox fiasco, people look for alternative exchanges that does the same job as Gox, so we can also deduce that Gox users were also the first users of the said exchanges.

Simple. Just like any other website, online store/shop, online service, etc., most of them(probably 90%+) always started with advertising, usually through targeted ads through social media sites like Facebook and Twitter and search engines like Yahoo and Google.

Eventually, if the service is good or better as advertised, people that has used that certain exchange would then probably refer the exchange when people are asking about exchanges through crypto communities like here in bitcointalk and on Reddit.
