NUCs can actually fit full sized desktop CPUs, they're pretty cool =D. AFAIK, the gcc4.7 build will run on anything x86 that can operate at least Debian Wheezy and equivalents (Ubuntu 12+). Celerons and other low profile CPUs (think 5W laptop chips) are fine for signing. The only thing you have to look out for is ARM CPUs, as I don't really bother building for those (you can cross compile yourself though).

Your primary security concern is not with the CPU but with making sure your signer is effectively air gapped.

Yay! Fixed as per your advice. Works using the gcc4.7 build on celeron.

However, I just purchased the NUC to use as an offline signer (dedicated sole purpose). Would you recommend ditch it and get a better model/chip - security wise? If so which one do I need?

Anyway many thanks for your advice and ongoing work!

Celeron are cheap CPUs, most likely lacks a lot of silicon Armory optimizes for. You'll have to use one of the unoptimized builds:

 I can get armory to install and run offline in TAILS 3.3 booting off the TAILS USB on my desktop computer. However, same the TAILS/ARMORY usb does not work when I try to run it on a NUC5CPYH (Braswell N3050 Celeron).

I have physically disconnected the wifi adapter in the NUC. Armory reports that it installs successfully, without errors. But when I double click on the icons to launch offline nothing happens.


Setup:
I created a TAILS 3.3 USB drive and downloaded the following files to a persistent folder, installing the psutils before armory:

armory_0.96.3-gcc5.4_amd64.deb
python-psutil_5.0.1-1_amd64.deb


Works fine on the following:
i5-4460
ASRock H97M Pro4 m/b. (probably about 2-3 years old)

Tried:
Same problem with armory 96.4 RC2 - installs but does not launch
