OP, is there any reason why you need to keep using the same seed/private keys? If. It's because you are expecting to receive more funds on the old wallet, then the only thing you can do is to contact all those who have your old addresses and update them with the new ones (from the cold wallet). In the meantime, keep monitoring your old wallet and manually transfer any coins it receives to the cold wallet.
OP can still keep backups of his old wallets. And as has been said many times in the past, there is no reason to delete and get rid of old wallets and seeds. You never know when someone might send some funds to such a wallet, but you destroyed its recovery phrase.

OP can check his old wallet from time to time to see if there are any new incoming transactions. He can even create a watch-only wallet using the master public key from his old wallet and check what is going on on his phone or online machine.

No, on the contrary, you got yourself in trouble, which is:

 - Someone gained access to your macbook while creating that wallet.
 - Someone might be able to recover the wallet file so all they need is the password.

Therefore, if you do not have technical knowledge of how to set up a cold storage wallet, I suggest you buy a hardware wallet and transfer money to it.

It is still a hot wallet if you just generate your wallet while your laptop or Macbook is connected to the internet and just recently turn the internet off or are you trying to import the same backup seed phrase/private key into other devices which is offline.
I think it's the latter. But it doesn't change much since in both cases the wallet was created on an online device and you, simply, can't turn a hot wallet into a cold storage wallet.

It won't ever be called cold storage you should generate an offline wallet in the laptop/macbook that is no internet connection in the first place and only a master public key is what you need to bring outside from your cold storage and import it to a device that is connected to the internet to monitor your wallet balances and to create unsign raw transaction.

First you need to have cold storage device ready with clean operating system, this could be hardware wallet or separate offline computer/laptop without any internet connection.
You can even generate paper wallet cold storage using offline computer I preciously mentioned, but easiest solution for newbies is to use open source hardware wallets like Trezor, Bitbox, Passport or Keystone.
Simply sending coins from your hot wallet to address generated by new cold wallet will be enough.

It's not enough since the seed phrase or private keys have been stored in an online machine.

To create a genuine Cold-storage set-up.
Every 'private' data must be set-up in an "air gap" machine, that include the seed/key creation and offline wallet set-up.

Cold storage means that the seed or private key (or the actual wallet, obviously) never, but absolutely never goes online.
So you cannot "go from hot storage (electrum wallet) to cold storage without modifying my private key and seed phrase". You have to create a proper cold wallet offline and send the funds from the hot wallet to the cold wallet.
