People use to recommend Protomail but I still feel it is a centralised platform and can totally say they are secured, what oogle does is to harvest your information and use it for their own gain and this is getting too far

Gmail is one of the best among all, it is undoubtedly the king of mail. Apart from Gmail there are many like Yahoo mail, icloud mail but all comes after Gmail.

ProtonMail or Tutanota are probably your best bets. I use ProtonMail a lot a haven't had any issues so far. Haven't tried Tutanota yet but have read a lot of good reviews about it. There are some security related downsides to using Javascript based web applications, see for example here: https://www.wired.com/2015/10/mr-robot-uses-protonmail-still-isnt-fully-secure/ but right now these are the two most secure and anonymous options out there.

I've been using gmail for years.  Can someone recommend a better solution?

I want something totally secure, something that doesn't scan my emails.  And when I delete it, I want it really deleted, not archived.

Disgusting to think about using that service all these years, and all the data they've collected on me, family, my friends and the world.

Would it be better for me to run a private mail server?  Like on AWS or something, with encrypted volumes.
