Where to find a good IP with high uptime, low ping and running the bitcoincore version 0.15.0.1 ?

For a node with high uptime, running a specific version of Core, you can find it at https://bitnodes.21.co/nodes/leaderboard/.

With regards to the ping, it is relative to your internet connection and distance from the node. The best would be to find one in your own country on the leaderboard.

Better if I find something with 0.15.0.1? Right?
Honestly, if you are looking for peers, there is simply no reason for you to find any nodes yourself. The latency doesn't really matter unless you are mining or doing some super time sensitive stuff.

Same goes for the version of Bitcoin Core. I would definitely recommend you to use the latest version of Bitcoin Core as a peer if you are using an SPV client.
Yes, I'm using an SPV Client and I need some IP-node with the latest version of bitcoin core (0.15.0.1) for stay safe.

That would be the best; SPV clients do not verify if a block follows the network rules and it would be a problem if a block follows a rule that only the legacy clients would accept. What SPV client are you using?
