My hidden gem I can rightly say right now is https://yumerium.com because I believe the Yumerium project is quite amazing that it needs investor's attention. Find time to go through the whitepaper http://yumerium.com/resources/files/whitepaper_v1.0_en.pdf and you will discover true treasures.
Cant predict like this about hidden gems, but by looking at coinmarketcap chart and coins there you can clearly know which project would be a gem in future.
Pundix (NPXS) is the hidden gem from my end. The token is doing and making it big which in the one next few months time, it would be huge and boom finally.
In order to find a hidden gem in real life, you would have to search, to dig into the dirt and mud, and spend a lot of time doing that. And there's no guarantee that you will find one.
The same is true with hidden gems in the crypto-space. You have to do your own due diligence, your own research to increase the chances of finding one.

A token from bounty campaign for me is like a hidden gem dig up from the mud you need to be patience to reach a high price in the market hold your coin properly need not to panic in order to achieve our boundaries.
Well I have HACKEN (HKN) also COVESTING (COV) this two tokens are my gem ...it will be in 2 years.... I trust them to the fullest... they have unique platform also project... so if you have some funds you can join me to benifits this gem. I'm very interested in Egretia project. It really looks like a hidden gem for me. They already have a working product and a very experienced team. And there product is used by more than 200k developers all over the world. The hype around the project is growing everyday. So I think that their public sale will have a huge success.
I personally have invested in a few icos of which 3 projects that are really good but they are trading below ico price and i think they will wake up and create big moves later this year they include; swissborg(chsb), mwat and hbz.

Aion is not unknown but maybe overlooked compared to wanchain. Aion has more than 13 million volume (24h), this is big enough. The coin is doing well in its own way.
hidden gem? i think enigma is that gem, Enigma price for today is ₽156,5503. The current outstanding supply is 74.8 Million coins and the total volume that has undergone an exchange of ₽1.029.290.364.
