The bigger companies use their own infrastructure and the smaller companies choose third party services such as Hostgator, Bluehhost etc, but I recommend to use your own servers.
Make sure to check  your country laws that allowed crypto services, if not try with your friends where it si allowed. Try to find the servers name that you want to build  similar site and see where they hosted.

I dont know if its a question for this forum.
But anyhow.
I'm wondering where do all these exchanges and wallets and mining pools are hosted.
Is it good old AWS/Azure cloud providers? Or something chinese? Is there any limitation on geographic location of actual servers? I know Russia has some laws requirement service provider to host services in Russia. 

Most probably you are right that most of them are using Amazon WEB Services. It is easy to setup and somewhat cheap. There are inherent vulnerabilities. But that is unavoidable. You mentioned laws about using these  exchange sites or the jurisdiction of servers in general. All we can do is study. Ever changing laws can be disruptive in the day to day operations. If you want to be perceived as a credible service you have to follow this and that. But you can always use the Tor network if you don't want to be bothered.

Not sure about mining pools, but large exchanges and wallets most likely run their own infrastructure as cloud services become quite costly once you reach a certain scale. The location of your servers will depend on the services you want to provide. If you plan to operate within regulatory grey areas it may be wise to look for off-shore hosting, otherwise you'll want to stay close to your targeted region.

Either way keep in mind that you also need to account for cold storage, ie. no matter how much you trust your hosting service, never leave more coins in the hotwallets than necessary.

Most companies use their own private servers or hosted services (like godaddy, hostgator, etc) to store their content. As stated above, if you have an internet connection, and with the use of some software - you turn your current machine into a private server which you would be able to access from anywhere in the world... Granted there is an internet connection.

Well you can host your own servers if you don't want the  government to put their nose in your business, all you need is a good internet connection. As for what big exchanges use, well i think no one can answer that.
