For me, the only thing that they should do to ensure to you that they are probably fair is for them to provide details about their script. like some crowdfunding sites which is very transparent to its user.

They said there is no Nonce on the site and that they use SHA256 and i wanna know what steps i have to follow to verify the rolll by myself , I used this site to check it by myself but is not working

You cant verify it on dicesites because they dont have a verifier for fortunejack the only way you could check them is by clicking the bet id on your My Bet tab then click the verify button.
