You need to be able to access your private keys, but you dont need to know them. They are stored in your wallet and protected by the password. So all you need is the wallet (with the private keys) and your password.

do I actually need to know my private keys when I go to send BTC from my Multibit wallet to my new paper wallet, or will I only be asked for my wallet password when I go to do the transaction?

You dont need to know your private keys to do a transaction, the password for the wallet is enough.

I have never seen my private keys. I exported them/made a back-up but when I open that with Notepad, it must be the encrypted version I see. I am making a paper wallet; when I go to transfer the BTC from my Multibit wallet to the paper wallet, will I need to know the private keys or will my password be sufficient?
