I've always used Windows seven, recently I use Linux more and more. I liked it better and the speed is higher at the miner. I can't explain why

Because Windows reserves part of the card's memory for its own use most likely. Also linux drivers have come a long way.

It all comes down to what you are most comfortable with I guess.

Personally, I hate windows. It's a shit OS and updates are a giant pain in the ass, especially with Windows 10. Linux is much more flexible, but will require you to know your way around it. And when it breaks, it takes a long time to reinstall.

But...my rigs are on Window machines, mostly because it's what I always used for mining. Back in 2016/2017, Linux support for drivers really sucked so choices were limited.

Can't answer directly as I'm part of minerstat team.

However, I can say why dedicated OS is better than Windows.
Mostly no (or very little) manual interaction with the system as everything comes prepacked and prepared as part of the installation.

+ No Windows updates
+ No Windows defender

Yes, there is an advantage on dedicated OS and every on of them costs (win can be free as you probably know).
Personally I use both (Linux and windows) and each has its advantages (much better support for drivers on Win)

Part about updates and defender is not an advantage for Linux but rather pre prepared OS with everything you need for mining

How do you understand that you need to use the OS for mining?
And how did you choose the most convenient OS for yourself?
By what criteria you make your choice?
