What things is the bitcoin blockchain being used for apart from obvious things?
Long back itself, it was proposed to use blockchain technology for digitized voting and managing securities market. Wherever we need to keep track of records, we may find opportunities to improve/simplify thing through blockchain technology. I am sure we are going to have cloud storage based on blockchain technology.

We have RSK[1][2] which is a new project that is under development, It should allow to run smart contracts just like Ethereum.

Really very interesting. I just smell end of ethereum here. Who knows, only time will answer.
Ethereum has dozens of really interesting application already running. Stratis may be a threat to Ethereum, and Stratis compliments Bitcoin rather than being competition.

In fact the Stratis team built a full Bitcoin node in C#  Smiley

You mean like "gas" for Ethereum? I'm not entirely sure as I didn't read fully the whitepaper but I suggest doing so as the project is very promising and they launched the beta test (Ginger) a few days ago.

Yu can add Walmart testing it for food traceability in China, And a subdivision of ATOS using it for traceability of cars. Smiley And to verify the diplomas/degrees/graduations of sudents. I don't remember the country starting to try this. Blockchain technology is going to be huge in domotic and robotic as well

Here is a very interesting paper I read some time ago that analyzes the usage of Bitcoin OP_RETURN ("arbitrary data") transactions:

On page 6 they list some of the use cases:

Assets gathers  protocols  that  exploit  the  immutability  of  the  blockchain  to certify ownership, exchange, and eventually the value of real-world assets. Metadata in transactions are used to specify e.g. the value of the asset, the amount of the asset transferred, the new owner,etc..
Document notary includes protocols for certifying the ownership and timestamp of a document. A user can publish the hash of a document in a transaction, and in this way he can prove its existence and integrity. Similarly, signatures can be used to certify ownership.
Digital arts includes  protocols  for  declaring  access  right  and  copy  rights  on digital arts files, like e.g. photos or music.
Other includes protocols whose goals differ from the ones above. For instance, Eternity Wall [20] allows users to store short text messages on the blockchain; Blockstore[13] is a generic key-value store, on top of which more complex protocols can be implemented

Some examples: Asset protocols: OpenAssets, Omni or Counterparty, Document notary protocols: Factom and Proof of Existence, Digital Arts: Monegraph and Blockai, and so on.
