One for everything to make it simple.

or

One for each system so you can monitor the hash rate on the pool website to know when and which system has crashed.

For best performance in LTC or BTC mining, how many workers do I need to create? A separate worker for each video card? Only one worker per mining rig with multiple cards? Just one worker and use that on multiple mining rigs?

Does it make any difference how the workers are assigned?

it doesnt matter. i use seperate workers to see performance for each card
