For a lot of altcoins (but not all), you can use gitian to build a mac osx wallet (i think gitian is the simplest way to build windows, linux and mac wallets).
I think you needed some dependancies that could only be found on a mac desktop tough (if i remember correctly).
For example: https://dashtalk.org/threads/how-to-gitian-build-dash-under-debian-jessie-using-lxc.5397/ (search for Mac OSX)
