i thought ethereum have accounting system just like bitcoin where it list all transaction going in.

its a smartcontract right? which me, only input are allowed. output only happen when certain rules met.

we should be able to see the total amount sent to a contract. am i right?

Yes you should be able to view all transactions in a block explorer e.g. etherscan etc.. but ICO's don't use their contract address as a deposit address. They will have either a single or more designated deposit address(es) and depending on the team it can also be viewable to the public but most of the time it's not.
This is true. Most of them don't show it, that's why I'm asking you to ask them.

how can i see their ethereum account to verify this?

Find their means of deposits:

-Fiat (any currency)
-Bitcoin (Bitcoin Address)
-Etherium (Etherium Address)
-or any cryptos

..and check ii on their respective explorer. Sometimes you need to sign up to see the deposit address.

At some of the cases, ICO's only uses single address for deposits but if that project uses different deposit address for different investors I think the best thing to do is to asked them directly with valid proofs.

There are numerous ICOs out there and since there is really little or no regulations for now,I dont think there is really any way to know the exact amount contributed to a project unless the devs disclose it.
