How to disable notifications or 'unfollow' a topic?

Profile --> Notifications and Email

To unfollow/follow only one tread, hit "notify" in the top left while in a thread.

Lastly, you could simply create an email account only for this forum, so it doesn't clutter up one of your mail email addresses but you can still check for notifications.
