There is not any option to hide your money from the bank.
This is how the financial system is made. You can hide them only if you pay with cash so the bank will never know where you pay and for what in your transactions.

The NSA can track crypto even if it goes through a mixer (but not very easily, and they probably won't except if they have their eye on you for some reason they think is important).
