I've been reading around for a while and it seems that there are a lot of dice sites. I was wondering how I can run the bitcoin demon software so that I can accept bets and give people specific addresses.
If anybody can help, that would be great!

Uhmm you use the json-rpc interface and wait for a new transaction. I wouldn't use the bitcoind for this type of site, I would say your better off just using bitcoinj and building your own since that will give you greater control over the tx coming in on a few addresses.
