I believe Electrum allow you to spend "unconfirmed change"... I don't think I've ever done it, so I am not 100% sure. I know that Bitcoin Core has an explicit setting for this:

Are you using multibit classic or multibit HD?

I agree with zend7's advice that you should switch to electrum. However, I'm guessing your current transaction's problem might be because all your Bitcoins are in the same address. After you sent some you have to wait until that transaction's confirmed until you can send again.

When you send Bitcons from an address multibit classic sends the left over change back to that same address. It won't let you spend the left over change until the transaction's confirmed.

When you send Bitcons from an address multibit HD sends the left over change to a new address. It also won't let you spend the left over change until the transaction's confirmed.

I don't know about Multibit how to do it, but since you say you will need to use it in the future, time to switch to Electrum wallet. It supports that feature as seen in the picture below.

I made a payment using Multibit.  Apparently I didn't send enough but multibit won't let me send another payment and all my money is in the same wallet.

If I can't get the money sent the transaction is canceled.  How do I do this?   What if I had multiple transactions to pay for and it it only lets me pay one at a time?
