Why don't you just stick to the same hardware and clone your install on each rig?

Well I haven't thought of that lol...

So clone a rig, DDU, install new AMD... Hmm that should work pretty easy.
But I still hate windows...

Hey thanks for the idea. Just cloned rig4 and made rig5 all in under 30 mins! Didn't even need to DDU. Just changed my host name and rebooted and bam! Up and mining...

I want to try some Linux. Rig build times are ridiculous on Windows.
SimpleMining sounds great except they don't support WiFi. All my rigs are wireless and cannot be otherwise.

Any suggestions?  I wanna keep it easy and don't mind paying for something.

LInux is free don't need to pay anything to us it. Ubuntu is the most popular one so that you will find more questions there and is easy for a newcomer to get around it ( can take sometime searching around for answers but it's great I started with it). Other than Ubuntu I'd suggest linuxmint and if you like playing around with systems try ArchLinux.

I used PiMP many years ago. Way before Claymore. Does PiMP use Claymore for dual mining? Or still using Sgminer?

Ubuntu is quite awesome, you might wanna try to out. you don't need any Linux knowledge to operate it.
